A New Diet Staple

One thing I was adamant about when setting out on this diet path is that it couldn't be a routine of continual denial. I can't abide saying NO to myself time, after time, after time.

I wanted to feel full and enjoy the food I was eating, just do it better.

These little rascals came about from a recipe I saw in a magazine and can't find the originator but there's nothing particularly out of the ordinary about them, but they're a great way to boost a breakfast or a good snack.

So what are these tasty cakes? Mainly egg. And I don't usually like egg. I can live with scrambled but no boiled, poached or fried in my world. Here's the recipe.

You'll need -
A dozen eggs
Salt and Pepper
75ml of Skimmed Milk

Whisk all these together to make a mix

250g of Mushrooms (I use Chestnut ones for extra flavour)
200g of Ham (smoked and chunky in preference for me)
Bunch of Spring Onions

Chop the mushrooms into chunks and cook in a frying pan on low/medium heat for around ten minutes. They'll shrink and lose moisture and gain a golden colour and nutty flavour. You can put a couple of squirts of fry lite in there too if you feel they need some encouragement.

Towards the end of this period add in the ham and onions and combine the whole lot in the heat, stirring to mix them well.

Once done and heated through you need some Yorkshire Pudding trays. About enough for eight puddings. Put a squirt of Fry Lite in each hole and fill the bottom with the Mushroom mix.

Carefully pour in the egg mix to the top of each hole and cook in a preheated oven for about 20 minutes at 200C.

If there's mix left over then reserve for more cakes or use more trays. You can cook them in batches and once cooled they keep well in a plastic box in the fridge. Best eaten hot though with a little Worcester Sauce for more flavour.
